Sweet and Spicy Tuna Stir Fry

Ingredients
1, (6 oz.) pouch StarKist Tuna Creations® Sweet and Spicy 2 tsp. vegetable oil ½ cup sliced red bell pepper ½ cup sliced yellow pepper ¼ cup sliced red onions 1 small zucchini, sliced in half and cut in 1-inch pieces 1 cup snow peas, stimmed and sliced 1 can baby corn pieces, drained 1 cup chopped baby Bok choy or baby spinach 1 ½ cups brown rice ¼ cup chopped cashews
Method
- In a large skillet heat 1 tsp. of vegetable oil over medium heat. Add the bell peppers and red onion and sauté for 2 minutes, until just starting to soften.
- Add the zucchini and snow peas and sauté an additional 2-3 minutes.
- Stir in the corn and the Bok choy and cook until the Bok choy is wilted, and the corn is hot. Stir in the tuna to combine.
- Divide the rice between 2 plates. Top each with the vegetable and tuna mixture. Top with ½ the cashews.
